Ingredients:
- 1 cup all-purpose flour (maida)
- 1 tablespoon chickpea flour (besan)
- 1 teaspoon active dry yeast
- 1 cup warm water
- 1 tablespoon yogurt
- 1 pinch of saffron strands (optional)
- 1 tablespoon ghee (clarified butter)
- Vegetable oil for deep frying
- 2 cups sugar
- 1 cup water
- 1/2 teaspoon cardamom powder
- 1 teaspoon rose water
- Sliced pistachios and almonds for garnish
Instructions:
- In a mixing bowl, combine all-purpose flour, chickpea flour, and active dry yeast. Add warm water and mix well to form a smooth batter. Cover the bowl with a cloth and let it ferment for 2-3 hours or until it doubles in size.
- Once the batter has fermented, add yogurt, saffron strands (if using), and ghee. Mix well to incorporate all the ingredients.
- In a separate saucepan, prepare the sugar syrup by combining sugar and water. Bring it to a boil and let it simmer until it reaches a slightly sticky consistency. Add cardamom powder and rose water to the syrup, and turn off the heat.
- Heat vegetable oil in a deep frying pan over medium heat. Fill a Jalebi squeezer (Jalebi mold) with the prepared batter.
- Squeeze the batter in a swirling motion into the hot oil to form spiral-shaped Jalebi. Fry until they turn golden and crispy. Remove them from the oil and immediately dip them in the warm sugar syrup.
- Let the Jalebi soak in the sugar syrup for a minute or two, ensuring they absorb the sweetness.
- Garnish the Jalebi with sliced pistachios and almonds for added flavor and presentation.
- Serve the delicious homemade Jalebi warm with a cup of tea or enjoy it as a delightful dessert after a hearty meal.
Jalebi is a classic and much-loved sweet treat in Pakistan, and this homemade recipe will undoubtedly win hearts with its irresistible taste and inviting aroma.
